What is the difference between cottage cheese and cream cheese?

It seems like cottage cheese and cream cheese taste quite a bit alike, but they have extremely different textures.  Often the two types of cheese can be substituted for each other in recipes. What is the difference?

    Cream cheese (defined by its milkfat and moisture content and acidity) is a “regular” cheese, cottage cheese is what’s left after most of the whey has been removed – ie mainly curds.
